  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 medium onion, chopped
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain any excess fat.
  3. Add the chopped onion to the skillet and cook for 3-4 minutes until translucent.
  4. Season the beef and onion mixture with garlic powder, onion powder, salt, and black pepper, stirring to combine.
  5. In a large bowl, mix the uncooked rice, beef broth, cream of mushroom soup, and frozen mixed vegetables until well blended.
  6. Add the cooked beef and onion mixture to the rice mixture and stir thoroughly.
  7. Grease a 9×13-inch baking dish and spread the mixture evenly into the dish.
  8. Cover the dish with aluminum foil and bake for 45 minutes.
  9. Remove the foil, sprinkle shredded cheddar cheese over the top, and bake for an additional 15 minutes until the cheese is melted and bubbly.
  10. Let the casserole cool for a few minutes before serving. Garnish with chopped parsley.
