Description

When the aroma of creamy, buttery corn fills your kitchen, it feels like a warm hug for your taste buds. Cream Cheese Corn Casserole is a quintessential comfort food, perfect for cozy evenings, festive holiday gatherings, or potlucks with friends. Its versatility makes it a star side dish that pairs beautifully with roasted meats, grilled vegetables, or even a hearty soup.

Ingredients

Scale
  • 2 cans (15 oz each) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 package (8 oz) cream cheese, softened and cut into cubes
  • 1/4 cup butter, melted
  • 1/4 cup milk
  • 1 tablespoon sugar (optional, for a touch of sweetness)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional for topping)
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish with non-stick spray.
  2. In a mixing bowl, whisk together the melted butter, milk, sugar (if desired), salt, and pepper until well combined.
  3. Fold in the drained whole kernel corn and creamed corn, making sure everything is evenly distributed.
  4. Gently add the cream cheese cubes into the mixture, folding them in carefully to maintain some chunks.
  5. Spread the corn mixture evenly into the prepared baking dish. If you choose to use cheddar cheese, sprinkle it generously on top.
  6. Place the dish in the oven and bake for 30-35 minutes, or until the casserole is hot throughout and the cheese is melted and slightly browned.
  7. After removing it from the oven, allow the casserole to sit for 5 minutes to set. Top with chopped green onions for a fresh finish before serving.

Notes

  • Use high-quality cream cheese and butter for the best flavor.
  • Adjust the sugar based on your sweetness preference or omit it for a purely savory dish.
  • Experiment with toppings such as crispy bacon bits or crushed crackers for extra texture.
  • Leftovers can be stored in the fridge for up to 3 days. Reheat in the oven for the best results.
